We proudly take our name after the “Cabildo Abierto”, a spontaneous revolution in Buenos Aires between May 22nd and May 25th in the year 1810. The Cabildo forced the creation of the Primera Junta or First Assembly. This was the first form of local goverment in the territory that would later become Argentina. Spain never recovered its dominion over our territory. Every May 25th we celebrate by preparing traditional "criollo" dishes, and our whole country stops to commemorate one of our most patriotic holidays.
